Meatball Potato Casserole: Chicken, Mushroom, Beef Recipes

Casserole is one of my favorite dish. Although I know that casseroles get a bad rap, but I also know that people really do love them. There are endless varieties of casserole. In USA casserole usually consist of meat, fish like tuna, veggies, and use chees as topping. Actually I try to mix and match the casserole recipe that I found a week ago in internet.
And practice it yesterday. And I never guess that it will success to make a delicious casserole. The juicy and tender meatball made with ground beef, crucker crumbs mixture, the humble potato, the flavorfull the chicken soup are perfect combination.
This recipe is super easy and only take a few time to make. The meatballs fryed first and the potato are boiled, then put in the casserole with chicken soup and cheese to bake to perfection become wonder to be hold. Delicious and indulgent. The kind of dish that makes you feel it’s going to be a great day

Preparation time: 10 minutes
Cook time: 30 minutes
Total time: 40 minutes
Yield :5 serving
Ingredients :
1 lb. ground beef
1/2 Cup cracker crumbs
4 russet potatoes
1 can cream of chicken soup (you can substitute with Cream of celery, cream of mushroom or cream of onion soups)
1 yellow onion, finely chopped
1 cage-free egg
1 clove garlic, minced
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons extra-virgin olive oil
Salt and pepper to taste.
8 ounces fresh mozzarella, thinly sliced

Direction
1. For meatball: combine beef, cracker crumbs, onion, , egg, garlic, and parsley in the bowl, add desired amounts of salt and pepper, mix gently using your hand, form mixture into a small ball.
2. Heat olive oil sauce pan over medium heat, fry meatball until brown all over. After cooked, transfer the meatball to plate using spoon.
3. Peel potatos, wash in the water to make them clean. Cut in quarter. Boiled  until almost tender. Place the meatball and potato into a casserole dish, pour 1 can cream of chicken soup over meatball and potato.
4. Heat the broiler, top the casserole with mozzarela, bake for about 30 minutes. until browned and bubbly around edges
5. Serve.
