NEW ORLEANS DIRTY RICE

Dirty rice is a traditional Cajun dish (an ethnic Acadian, Louisiana, United States) made of white rice cooked with chunks of chicken liver so that it has a dark color. Similar to pilaf, this dish also contains of green pepper, celery, and onions ("holy trinity").
Parsley or green onions usually are added for garnish. Dirty rice Cajun found in many areas in southern Louisiana and Mississippi; however, these foods can also be found in other areas in the southern part of the United States. In some areas in the south, dirty rice also called “rice dressing”. Dirty rice is also often served as a complementary food with salmon.
Dirty rice is a well loved New Orleans dish and a Louisiana classic, with as many different recipes as there are cooks. A flavorful one-pot meal that contains much less sodium than store bought boxed rice dishes. Pair with fresh vegetables or salad and fruit to make a complete meal. Try this favorite version. Ingredients:
1 pound lean (90%-96% lean) ground beef
1 teaspoon olive or canola oil
1 cup chopped onion
3⁄4 cup chopped celery
1 cup chopped green onions, including tops
(about 1 bunch, or 4-5 large scallions)
2 tablespoons chopped fresh parsley (or 1 tablespoon dried)
1 clove garlic, minced
1⁄2 teaspoon dried thyme
1⁄2 teaspoon dried basil
3 cups plain cooked (no salt or fat added) brown rice
1⁄4 teaspoon salt
1⁄2 teaspoon hot sauce
1⁄4 teaspoon cayenne pepper
1 cup reduced sodium chicken broth
Fresh ground pepper to taste

Direction :
1. In a large deep skillet, cook ground beef until no longer pink, over medium-high heat. Drain excess fat (but don’t rinse pan) and set meat aside.
2. Return pan to stove and add oil, reduce heat to medium. Add onions, celery, green onions, parsley, and garlic and cook until tender.
3. Stir in thyme, basil, rice and cooked meat. Mix well.
4. Add salt, hot sauce, cayenne, chicken broth, and fresh ground pepper. Cook and stir just until rice and meat are heated through and some of the chicken broth is absorbed.

For a little more color, add finely chopped red pepper along with the other vegetables. Ground turkey can be substituted for the ground beef.
