Canadian Bacon Onion Quiche Recipe

This Canadian bacon onion quiche is absolutely delicious, made with simple ingredients and easy to make. 
Total time : 1 hour 25 minutes
Preparation time: 20 minutes
Cook time : 1 hour 5 minutes
Yield : 6 servings

INGREDIENTS :

Pastry
7 tbsp cold unsalted butter
1⁄2 cup 4% large curd cottage cheese
3⁄4 cup flour
1 tbsp flour

Filling
1 1⁄2 tsp unsalted butter
1⁄2 cup onion, diced
1⁄2garlic clove, minced
1 cup cheddar cheese, shredded
4 ounces Canadian bacon, diced
6 eggs
1⁄4 tsp black pepper
1 dash cayenne pepper

DIRECTIONS
1. Preheat oven to 350°
2. In mixing bowl, combine butter and cottage cheese and beat with mixer, gradually stir in flour using spoon.
3. Shape the dough into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. You can cut plastic wrap big enough so that you can later roll dough out on it so clean up is easy.
4. Roll out dough to fit a 9 inch pie plate.
5. Transfer dough to greased pie pan.
6. Trim dough to 1/2 inch beyond edge of plate; flute edges.
7. In skillet, heat remaining butter (1 1/2 t.) over medium heat, sauté onions until fragrant or until golden brown. Make sure to get the onions done to your preference. because the next steps do not cook it much more than this step does
8. Remove skillet from heat. Stir in garlic and set aside.
9. Place cheese at bottom of dough, top with Canadian bacon.
10. In large bowl, combine egg and peppers, lightly beat, stir in onion mixture from skillet.
11. Then pour into pastry shell.
12. At this point, either wrap well and freeze or bake at 350 degrees for 40 - 45 minutes or until a knife inserted near the center comes out clean. Let sit for 10 minutes before cutting.
TO USE FROZEN QUICHE:
1. Remove frozen quiche from freezer 30 minutes before baking.
2. Place rack in middle.
3. Preheat oven to 350 degrees.
4. Put pie on a baking sheet.
5. Bake at 350 degrees for 40 minutes, cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean.
6. Let stand for 10 minutes before cutting.
