This recipe is really easy to make, and just need a few ingredients, this sweet corn consist of frozen kennels, onion, herb cheese, celery, egg, all purpose flour, half and half, and ready pie crust. Ingredients:
1 15-ounce package All Ready Pie Crusts, room temperature
1 tablespoon butter
1 10-ounce package frozen corn kernels
3 green onions, chopped
1/3 cup soft herb cheese (such as Boursin)
1 1/4 cups half and half
2 tablespoons chopped celery leaves
2 eggs
2 egg yolks
2 tablespoons all purpose flour
Direction :
1. Set the oven to 375°F.
2. Preheat heavy medium skillet to medium-low heat. Melt butter, Add corn and sauté for 5 minutes. Add green onions and celery leaves and toss to heat through. Remove the pan from heat.
3. Combine cheese, eggs, yolks and flour in medium bowl. Mix and gradually add half and half, stirring until mixture is smooth, stir in corn mixture.
4. Unfold crusts on work surface and press out fold lines. And then Line 9-inch-diameter pie dish with 1 crust. Spoon filling into crust-lined dish. Arrange second crust over, tweak edges together to close and crimp decoratively, then cut several slits in top of crust to allow steam to escape.
5. Bake pie in the preheated oven until filling is puffed and golden, about 45 minutes, Let stand 15 minutes, serve warm.
