Taiwanese Pineapple Cakes are among Taiwan's most recommended food mementos. One of the most crowd-pleasing desserts or sweet nibbles throughout Chinese New Year. All over you go in Taiwan, you will see sellers, stores, street vendors selling their Chinese New Year cakes, and one of the most well-known foods. It is believed that ingesting this sweet goodies will bring you streak of luck and prosperity's sake all of the year through.
Occasionally called Pineapple Tarts or Pineapple Shortbread, they taste incredible when served a little warm and paired with a cup of hot green tea. The outside skin of the shortcake is not quite sweet and it is crunchy, melt in your lips texture. You can make it as a souvenir for your loved ones for the coming Chinese New Year if you love this kind of small cake. They are rectangular shapes or squares fit, rich, crunchy, buttery, and filled with a decadent filling.
Ingredients:
• 380g plain flour, sieved
• 60g milk powder, sieved
• 550g store bought pineapple filling
• 250g cold butter, cut to cubes
• 1 tbsp honey
• 30g icing sugar, sieved
• 3 egg yolks
Directions:
1. Punch icing, butter and honey sugar together till pale and light at medium speed.
2. Change to low speed, beat in egg yolk at some a time up until just integrate.
3. Include sifted flour and milk powder.
4. Beat till simply integrate (do not over mix up) and knead to smooth dough.
5. Separate the dough into little round balls (30g each), flattened dough and cover with pineapple filling (20g each).
6. Place into pineapple tart form.
7. Put the mould filled with pineapple into a baking pan lined with baking paper.
8. Bake in preheated oven 165C for approximately 20 mins or light rich brown.
