1 kg high protein flour
15 gram instant yeast
15 gram salt
80 gram sugar
2 gram bread improver
500 ml water
100 ml vanilla milk
50 gram margarine
750 gram butter
For spread:
1 egg
10 gram water
INSTRUCTIONS:
1. Mix all dry materials of bread
2. Pour water and egg
3. Enter margarine. Mix well
4. Wrap the dough with plastic and chill it for 20 minutes in refrigerator
5. Remove the dough from refrigerator. Then mix with butter
6. Folding the dough and then enter again to refrigerator for 5 minutes
7. Roll again the dough to rectangular shape
8. Flatten the dough
9. Slice the dough into the shape of croissant
10. Cover the dough with damp cloth so that it expands
11. Spread the dough with yolk
12. Bake the dough in the oven for 15 minutes
