How to Make Okonomiyaki, A Japan Recipe

Okonomiyaki is a popular Japanese dish that is also sometimes called Japanese pancakes or Japanese pizza. However, it's quite different from both pancakes and pizza. Okonomiyaki is an incredibly popular savoury pancake from Osaka that embodies the best of casual cooking and is great for sharing.
“Okonomi” in Japanese means “as you like”, so it’s a savory pancake that contains whatever ingredients you want. For example, Osaka style Okonomiyaki includes batter, which is made of flour and water or dashi, shredded cabbage, egg, and green onion.
Hiroshima style Okonomiyaki uses almost same ingredients, but they are use fried egg and yakisoba noodles (or sometimes udon noodles) as toppings.

INGREDIENTS
45 g wheat flour
1 egg
50g silken tofu, pressed
katsuoboshi
nori sheets
90 g cabbage, finely chopped
1 carrots
vegetable oil
Salt
Ginger
Koebi (dried baby shrimp)
Sufficient onion
2 scallion
Sauce :
9 tablespoon tomato sauce
3 tablespoon worcestershire sauce
1 tablespoon soy sauce
Kewpie mayonaise

INSTRUCTIONS
1. Whisk together Okonomiyaki Flour and water until smooth.
2. Add eggs, cabbage, onions, ginger, koebi and sausage and mix, but don't over mix.
3. Oil a griddle that has been heated to 200C and add Okonomiyaki mixture divided into two pancakes.
4. Using a spatula flatten and form pancakes until around 1.5cm  and 3/4"thick - approximately 30cm and 12" thick across.
5. Add bacon pieces to cover top of each pancake.
6. After about 4 minutes, flip over pancake and cook for 4 minutes.
7. Flip pancake again (bacon side up). Heat the oil in the open space and crack an egg. quickly spread the egg into the same size as okonomiyaki. cook for 3 minutes or until firm and well browned.
8. Remove to plate and drizzle with Kewpie mayonnaise, okonomiyaki  sauce and sprinkle with nori and katsuobushi.
9. Serve immediatelly.
