Green Beans with Charred Onions Recipe

Green beans is delicious vegetable especially when you bring them to life with a bit of flavor. Green beans are low in Sodium, and very low in Saturated Fat and Cholesterol. Ingredients
1 pound fresh green beans, trimmed
1 large red onion, cut into 4 slices
Salt and black pepper
2 tablespoons olive oil, divided
1 garlic clove, minced
2 tablespoons red wine vinegar
1 tablespoon butter
6 fresh thyme sprigs
1/4 cup loosely packed fresh flat-leaf parsley, chopped
2 tablespoons thinly sliced fresh chives

Directions
1. Bring 4 quarts of water to a boil in a large pot. Add salt, cook bean in the salted water over medium-high heat 4 minutes until crisp-tender. Remove then rinse in cool water. Set aside.
2. Sprinkle sliced red onion with salt and pepper, and cook in 1 tablespoon hot olive oil in a large cast-iron skillet over medium-high heat 3 minutes on each side or until charred and tender. Remove onions from skillet; wipe skillet clean.
3. Heat 1 tablespoon oil over medium-high heat. Cook garlic in the skillet and let them char and soften slightly on one side or until fragrant. Add bean, thyme, cook and stir occasionally until bean are slightly charred (for about 3 minute), Stir in vinegar, next 3 ingredients, and sliced onion; tossing to coat. Remove from heat Sprinkle the beans with salt and serve.
