How to Make Baingan Masala

Baingan Masala is a tasty Indian dish functioned as a meal that is packed with tastes from rich lively tomatoes, a tip of garlic, garam masala and not to miss out on the coriander powder and leaves that offer it that rich gravy consistency and taste.

Ingredients
For the Paste
1/2 tsp mustard seeds (rai/ sarson).
2 green chillies.
1/3 cup coriander (dhania) leaves.
2 tablespoon peanuts
2 tablespoon sesame seeds (til).
Other Ingredients
750 gms brinjals (baingan/ eggplant), sliced.
1/2 tsp turmeric powder (haldi).
1/4 tsp coriander (dhania) powder.
1/4 tsp chilli powder.
1/4 tsp garam masala powder.
1/4 tsp dried mango powder (amchur).
2 onions, sliced.
1/2 tsp ginger-garlic (adrak-lehsun) paste.
1/3 tsp cumin seeds (jeera).
Salt to taste.
1/2 cup beaten curds (dahi).
1 tsp lemon juice.
3 tablespoon oil for frying.

Methods
1. Make a great paste of all the components pointed out under for paste.
2. Heat oil in a pan and fry the jeera seeds till they crackle.
3. Now include the sliced onions and fry till they turn pink in color.
4. Include the ginger-garlic paste and fry for another minute.
5. Include dhania powder, red chilli powder, amchur powder and garam malsala powder and fry for another minute.
6. Now include the great paste.
7. After frying for 1/2 a minute, include haldi powder, salt
8. Now include the beaten curds and blend well.
9. To this mix include the brinjal pieces.
10. Include a little water and cover till the brinjals are completely prepared.
11. Put the lemon juice and garnish with corinader leaves.
12. Serve hot with chapati or pratha.
