Tuna salad is an extremely versatile dish that works as a snack or a light lunch, you can make it any way you like with vegetables, fruits, and much more. And here’s another tuna salad that’s lighter on the tuna with pumpkin.
Pumpkin Tuna Salad, this salad is one of my favorite salad, I like the way they tested. I love the proportion of tuna salad to vegetables. So tasty and have beautiful color for sure. This tuna salad use canned tuna, at first i think canned tuna smells like cat food and I imagine the taste is quite similar as well.
But after I try this recipe, I’m total convert. This salad is easy to make, and just take a few time. If you are looking for tuna salad recipe, you have to try this recipe. This pumpkin tuna salad consist of canned tuna, pumpkin, onion, garlic, herb ( mint and coriander leaves), sweet chili sauce, tomato sauce, lemon, fibergy, chili flakes, spinach, sunflower and chia seeds. So rich of ingredients right? But trust me, it will rich of flavor that can make you want it more and more. It’s really creative salad ever. In this salad, sunflower seeds and chia seeds provide a deep, nutty flavor and are packed with vitamins E.
Ingredients :
1x canned tuna in spring water
300 g pumpkin, clean, cut into cubes
1/2 onion, dice
1/2 teaspoons garlic powder
1 Cup of mint and coriander leaves
3 tablespoons sweet chili sauce
3 tablespoons low salt tomato sauce
1/2 lemon, squeeze
1 tablespoons Fibergy Plus
Salt and Black pepper
Chili flakes (optional)
2 Cup spinach leaves
30g sunflower seeds
2 tablespoons chia seeds
Direction :
1. Heat the saucepan with oil over medium heat-high. Add dice onion and pumpkin, cook until soft, add garlic powder and season with salt
2. Chopped the herb, mix the chopped herb, sweet chili sauce, tomato sauce, black pepper, 1/2, squeeze of lemon, Fibergy plus and chilli flakes, stir in canned tuna and pumpkin, mix well.
3. In a bowl, add the spinach, pumpkin and tuna mixture.
4. Drizzle with sunflower and chia seeds
5. Serve
