½ Onion, chopped
2 tbsp sea salt
¼ cup whey or 1 tbsp starter culture, optional
2-3 medium beets, peeled and chopped into 1 inch cubes
¼ cabbage, chopped
Filtered water to cover

Instructions:
1. Include onion together with cabbage to a 2 quart glass jar.
2. Include the beets aside from the onion and cabbage to ensure that they serve as a weight.
3. Include salt plus optional whey.
4. Wrap with filtered water, leaving an inch in between the top of the jar and the top of the water.
5. Place and close the jar in a cool location in your house.
6. Move to the refrigerator after 3-7 days.
